1 can you record?
2 do you get all sky channels +BBC and ITV ?
add sky sports and TNT sports

Only as long as "they" make it available.

If you have recorded it, you can keep it basically for as long as the device lives.

We had recordings on our old sky boxes that were years old.

When I was considering my Sky options, they told me that with Sky Stream, recordings are kept in the cloud but I wasn't sure whether I was able to record programmes or whether they were referring to programmes available on streaming devices such as the iPlayer. This was another reason I went for Sky Q.

I also believe that some channels available on Sky Q (satellite) are not available via Sky Stream.

Very few are "kept in the cloud" (a few of skys own channels I think).
In most cases its just a pointer to the relevant streaming service, such as iPlayer.
So if they stop streaming it, your so called recording has gone (becasue it never really existed).

Had this sort offer via the post a couple of days ago. Could be wrong but looking at the small print , price was subject to change( no surprise there) but think it seemed to rise to around £90 when it ended. The best point was no land line needed

That's the impression I got as well, which was one of the reasons I said no, and instead went for Sky Q.
