A really nice spicy chorizo, smoked bacon and butter bean soup I made earlier today with some nice warm crusty bread and butter.
I never follow recipes and rarely note down the details of what I concoct but I did this time so, for anyone who's interested, here's what went into it.
Ingredients
2 large onions.
3 large carrots.
3-4 sticks of celery.
4-6 rashers of smoked bacon.
1 chorizo ring.
Garlic - 4-5 cloves.
Carton of pasata.
4 tins of butter beans.
Approx. 500mls water.
Chicken stock cube.
Salt & black pepper to season.
Tomato ketchup to sweeten.
Hot chilli sauce to add heat.
Parsley.
Method
Chop and gently fry the chorizo and bacon to brown slightly and release their oil. Add the chopped vegetables and soften in the pan with garlic as required. Add water and stock cube then simmer gently for 30-40 mins. Add tomatoes or pasata and a little ketchup to sweeten. Add butter beans and bring to simmering point then add chilli sauce/powder to the desired heat and continue simmering as required. Add parsley when off the heat shortly before service.
The above made enough for 3 adults with about an equal amount left for tomorrow.

Just been out for a celebratory meal, and had -
Goat’s cheese and pesto risotto finished with air dried tomatoes and rocket leaves for starters,
followed by chargrilled 10oz fillet steak with garlic butter, roasted air dried tomatoes and fries for mains,
with Classic Affogato (ristretto, vanilla ice cream and Amaretto) for dessert.
Washed down by a bottle of Madfish Grandstand Pinot Noir.
Now for a very large 18 year old Glenfiddich for a digestif.
Life is good (if a little blurry at the moment).

4x 4 Cheese Arancini (used up leftover 3 cheese risotto but added an extra mozzy cheese centre), garlic and balsamic sauted courgettes. Lemon, olive oil and parmesan rocket salad. Parma hams and sun dried tomatoes with homemade garlic ciabatta. Oh and washed down with a nice chat neuf du pape.
